day 7 - oatmeal 10 ways.

banana cream pie oatmeal.

before i post this recipe.. know that this tasted LITERALLY exactly like banana cream pie. i devoured this in about 3 minutes. when i was a kid, my grandparents owned a bakery and they used to bring over the BEST banana cream pie ever. this is where i got the idea! who doesn’t want banana cream pie for breakfast?!

RECIPE:
1/2 cup oats
1 cup unsweetened almond milk
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 tablespoon fat free sugar free vanilla pudding mix
1/4 cup skim milk
1 banana
1/2 scoop vanilla protein powder

for the oatmeal:
combine oats and almond milk in a bowl
microwave for 1 minute
add vanilla extract, 1/4 scoop protein powder and cinnamon
microwave for another minute

for the banana cream:
mash up 1/2 of a banana in a small bowl
add pudding mix and skim milk and mix until blended well
let sit for about 5 minutes until mixture thickens into pudding
add 1/4 scoop vanilla protein powder and mix

note: pudding will not set with soy/almond milk. must use regular milk!!

slice the other 1/2 of your banana for layering
layer your oatmeal and banana cream into a mason jar/glass/bowl along with your sliced bananas. i drizzled mine with a little sugar free caramel syrup! what’s banana cream pie without caramel? STILL DELICIOUS but i HAD to! hehehe! enjoy your “pie”!
