chocolate lava cake.

RECIPE: (makes 2 cakes)
in a medium sauce pan, heat
3/4 cup unsweetened almond milk/skim milk/light soy milk
1/4 cup semisweet chocolate chips
1/2 teaspoon baking powder
3 tablespoons truvia
2 tablespoons whole wheat flour
2 tablespoons cocoa powder

mix well on medium heat until the chocolate chips are melted and batter is smooth
remove from heat

in a small bowl or electric mixer, combine
1 egg white
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract

beat this mixture until you get stiff peaks

add egg whites to the batter in 3 increments folding it in each time, be careful not to over-mix

grease 2 ramekins
bake at 350 degrees in ramekins for about 12-15 minutes or until the outside is cake-like and the inside is still soft and gooey!

turn upside down on a plate and add frozen yogurt, cool whip, chocolate syrup and chocolate chips and you’re good to go 🙂
