RECIPE: (makes 4 burgers)
1 package ground turkey
1 cup fresh spinach leaves (chopped)
2 cups sliced mushrooms
2 cloves garlic (minced)
1/4 cup marsala cooking wine
1/8 cup skim milk
asparagus (however much you wanna cook for a side!)
4 slices swiss cheese
1 teaspoon garlic salt
1 teaspoon garlic powder
1/2 teaspoon paprika
1 tablespoon adobo seasoning
1 teaspoon black pepper
olive oil
1 tablespoon cornstarch
in a large pan, turn on medium heat and drizzle about 1 tablespoon olive oil
add garlic and let simmer until garlic turns golden brown
add mushrooms, milk and marsala cooking wine
let simmer until mushrooms are tender
in a small cup, add 1 tablespoon cornstarch and about 1 teaspoon very COLD water and mix
add cornstarch mixture to mushrooms and keep mixing so it doesn’t clump!! sauce should get thick like a gravy
keep on low heat to keep warm
in a large bowl, mix ground turkey, paprika, black pepper, garlic salt, garlic powder, adobo seasoning, and chopped spinach leaves
make 4 burgers about 1 inch thick
in a large pan add about 1 tablespoon olive oil on high heat
add burgers and sear on both sides
lower heat and add about 1 tablespoon of water to your pan and cover for about 5 minutes on each side (doing this will keep your burgers moist and juicy)
when burgers are finished, add a scoop of your mushroom mixture onto each burger along with a slice of swiss cheese and cover your pan again until cheese is melted
burgers are done!!
for asparagus:
put foil over a baking sheet (less mess)
spread out your asparagus in one layer
drizzle olive oil, salt and pepper on top
bake at 350 for about 15 minutes or until tender
