RECIPE:
2 tablespoons olive oil in a dutch oven pot or bigger soup pot
1/2 diced onion
2 stalks diced celery
let that simmer until the onions and celery are tender
add 2 heads chopped broccoli
1 head chopped cauliflower
1 and 1/2 cups skim milk
3 cups low sodium chicken broth
let this mixture come to a boil, then lower heat and let simmer for about 20 minutes until broccoli and cauliflower are tender.
mix with hand blender until everything is smooth
add 2 tablespoons fat free ricotta cheese! this makes it thicker and more rich without adding any fat.
serve hot and sprinkle with cheddar and ground pepper!! however you like! ENJOY!
