i made these for work yesterday for st. patty’s day. i also made them gluten free because one of my friends at work is gluten free. (not by choice!) i would always bring in desserts that he couldn’t eat! i felt so bad and i promised myself i would make him something he could enjoy with everyone. so i just got gluten free chocolate cake mix and whipped them up with my own homemade mint buttercream. they turned out so delicious! i have to learn how to make gluten free from scratch. 🙂
gluten free chocolate box cake- follow instructions!
mint buttercream: (ices about 24 cupcakes-depends how much you use on each cupcake)
2 sticks butter room temperature
4 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon mint extract
green food color
in an electric mixer, beat butter and add powdered sugar about 1 cup at a time.. you could use less or more sugar, depending on how sweet you want it. so taste it after about 3 cups and make sure you don’t over sweeten according to your taste 🙂
add vanilla extract and mint extract and green food color! however green you want it!
ice your cupcakes with a piping bag with any attachment and add mini chocolate chips on top to make it look like mint chocolate chip! you could also add the mini chocolate chips to the icing before icing your cupcakes.
