chicken parmesan.

RECIPE:
take thinly sliced chicken breasts and dip them in a bowl of egg whites.
coat each one with bread crumbs and place them on foil on top of a baking sheet (for less mess).
bake on 350 for about 15 minutes.
then take thinly sliced provolone cheese, cooked spinach and cooked onions and add to the top of the chicken.

spinach onion mixture: in a pan, add about 1 tablespool olive oil and 1/2 red onion. once onion is translucent add 1 and 1/2 cups fresh spinach and wait for spinach to wilt.

put the chicken back in the oven until cheese is melted.
add thinly sliced tomatoes and sprinkle with romano cheese YUM!

whole wheat spaghetti:
boil a pot of water with 1 teaspoon salt.
when water comes to a rapid boil, add spaghetti.
cook until tender then add to a bowl with about a tablespoon olive oil.

tomato sauce:
2 tablespoons tomato paste
1 can crushed tomatoes
3 diced roma tomatoes
1 and 1/2 tablespoons adobo seasoning
salt and pepper to taste
heat all this up in a pot and you’re done! so good and simple.
